How to store food in fridge and freezer? Food stored in industrial or residential refrigerators must be kept at a temperature of 4°C or lower. Generally, in industrial kitchens, thermometers are located in the hottest part of the refrigerator, near the door.
In addition, in restaurants, temperatures must be monitored at least 3 times a day to ensure they remain at or below 4°C. This is necessary due to the volume of products stored in these refrigerated spaces, called walk-in fridges.
Frozen foods must be kept at a temperature of -18°C or lower. Like refrigerators, walk-in freezers have their temperature monitored regularly.

Organized Fridge
Freezers and fridges will work better and keep your food safer if:
- Keep the door closed as much as possible
- Don’t overload its spaces
- Make sure the door seals are in good condition
- Do not cover shelves with cloth, cardboard, or other solid materials.
- Store food using the first-in, first-out or FIFO rule to be consumed on the safe date.
- To organize food into fridges, keep milk and dairy products, pâtés, ham, and eggs on the top shelf where they need more refrigeration.
- On the Intermediate shelf, store food that is cooked.
- On the lower shelf, the ideal is to place the foods that are being defrosted, and there is the risk of spilling their juices that can contaminate other foods.
- Keep food fresh in the drawers, such as vegetables and fruits.
- On the refrigerator door, it is ideal for keeping beverage cans, spices, jams, and water.
- All food in the fridge and freezer must be packaged, covered, or sealed in its original packaging.

I appreciate you letting us know that in restaurants, it is required to monitor temperatures in walk-in fridges at least three times a day to ensure it is kept at or below 4 degrees Celsius. Speaking of walk-in fridges, the one we have for the restaurant I manage hasn’t been cooling well lately, so I want to get it repaired immediately before this spoils our ingredients. I’ll keep this in mind while I look for an electrician to hire for our commercial walk-in freezer repairs soon.
